| POTATO PATTIES RECIPE
Potato Patties (Serves 4)
450g cooked potatoes, mashed
100g grated cheese
1 beaten egg
1 tbsp skimmed milk
25g finely chopped onion
salt and freshly ground black pepper
polyunsaturated vegetable oil for frying
Mix the mashed potato and grated cheese.
Beat the egg with the skimmed milk and slowly add to the potato mixture, making sure it does not become too moist.
Add the chopped onion and salt and pepper to taste.
Shape into 8 small cakes.
Spray a frying pan with a little oil and fry the cakes on both sides until golden brown.
