Oaty Date Sqaures (Serves 4)
225g Dates, (chopped)
Finely grated rind and juice of one orange
175g rolled oats
175g soft light brown sugar
100g wholewheat flour
Preheat oven to 180 C, 350 F, Gas 4
Place the dates in a pan togetherwith the orange rind.
Pour the juice of the orange and top it up with water until it makes up 100ml
Add the orange juice and water to the dates and cook slowly till the mixture is soft and pulpy.
Blend the margarine with the remaining ingredients and press half in the base of a lightly greased 18cm (7") square tin.
Spread over the date mixture, sprinkle over the remaining oat mixture and press down lightly.
Bake for 35-40 mins, then allow to cool in the tin.
When cold cut into 16 squares.
