  HOT CROSS BUNS RECIPE


Hot Cross Buns

Hot Cross Buns (makes 15)

Ingredients:
  • 500g plain flour
  • 2 teaspoons of white sugar
  • pinch of salt
  • sachet of instant yeast
  • 3 tablespoons olive oil
  • 350ml warm water
  • 200g. sultanas
  • 100g. brown sugar
  • 3 teaspoons mixed spices
  • 2 tablespoons candied peel
  • small piece of short crust pastry (for the crosses)


    Method:
    Make a mound of the flour, salt, white sugar and yeast.
    Dig a hallow in the middle of the mound and pour in the water.
    Mix the dry ingredients into the water.
    Knead the mixture into a sticky dough.
    Add the sultanas, brown sugar, candied peel and mixed spices to the dough and continue kneading.
    Kneed for a total maximum of eight minutes.
    Allow the dough to rise for around 90 minutes or until it ha doubled in size.
    Flatten gently, cut into bun shaped pieces and roll into shape.
    Place the buns onto an oiled baking tray and leave them to rise for another 45 minutes.
    Cut strips out of the short crust pastry and arrange in a cross shape on top of the buns.
    Bake on gas mark 8 for around 15 minutes.
    While the buns are baking, dissolve 25g of sugar in 25ml of hot water and brush the hot cross buns with this mixture as soon as they are out of the oven.
    Allow to cool on a rack.
