Green Lentil Soup
Green Lentil soup (Serves 4)
500g. small green lentils
250g. small onions
3 cloves of garlic (peeled and left whole)
100ml olive oil
3 litres water
40ml red wine vinegar
salt and freshly ground black pepper
Put the lentils, onions, garlic and bay leaves in a large pot and add the water.
Allow the soup to simmer uncovered on medium heat for 2 and a half hours.
During the first 20 minutes of cooking skim off the scum that floats on top.
When the first twenty minutes are up add the olive oil.
Season the soup before serving.
Place a tiny amount of red wine vinegar in each bowl of soup before serving.
