| GNOCCHI WITH TOMATO SAUCE RECIPE
Gnocchi with tomato sauce
Gnocchi with tomato sauce (Serves 4)
225g mashed potatoes
salt and freshly ground black pepper
20g grated Edam cheese, to serve
1 tbsp olive oil
50g chopped onion
1 can tomatoes (225g)
freshly chopped basil
Place mashed potato in a bowl, add the egg, flour and seasoning and mix well.
Shape into small walnut-sized balls and place in a sieve.
Lower sieve into saucepan of boiling water and cook until gnocchi rise to the surface of the water.
Drain and keep warm.
Meanwhile, heat the oil in a saucepan and fry the onion gently until soft.
Add the tomatoes with their juice, and salt and pepper to taste.
Simmer until thick, then stir in the herbs.
Pour sauce over gnocchi and sprinkle with the grated cheese.
