| GARLIC FRIED SPINACH RECIPE
Garlic Fried Spinach
Garlic Fried Spinach (Serves 4)
2 tbsp olive oil
1 large onion, chopped
1 clove garlic, crushed
100g lean bacon, derinded and chopped
1 tbsp lemon juice
salt and freshly ground black pepper
Heat the olive oil in a large pan, add the onion, garlic and bacon and fry gently for 5 minutes, stirring frequently.
Wash the spinach and add to the pan with only the water clinging to the leaves.
Add the lemon juice and salt and pepper to taste.
Fry gently for 3 to 5 minutes until the spinach is just tender but still a bright green, stirring constantly.
Check seasoning and serve.
