French Bean Salad
French Bean Salad (Serves 6)
175g cherry tomatoes, halved
1 tsp sugar
450g French beans, topped and tailed
175g feta cheese, cubed
salt and freshly ground black pepper
For the dressing:
90ml olive oil
45ml white wine vinegar
1/4 tsp Dijon mustard
2 crushed garlic cloves
salt and freshly ground black pepper.
Preheat the oven to 230C, 450F, Gas Mark 8
Put the cherry tomatoes on a baking sheet and sprinkle over the sugar, salt and pepper.
Roast for 10 mins, then allow to cool.
Meanwhile cook the beans in boiling salted water for about 10 mins.
Make the dressing by whisking together the oil, vinegar, mustard, garlic and seasoning.
Drain the beans and immediately pour over the vinaigrette and mix well. When cool, stir in the roasted tomatoes and the feta
