Falafel Salad Pittas
Falafel Salad Pittas (Serves 2)
410g of chickpeas, drained and rinsed
2 tbsp chopped mint
1 tbsp ground cumin
1 tbsp ground coriander
1 medium egg white
100g low-fat Greek yogurt
2 pitta bread
8 slices cucumber
1 sliced tomato
Put the chickpeas into a food processor and add 1 tbsp mint, the cumin, coriander and egg white. Whiz until it turns into a slightly coarse paste, season and shape into 12 falafel.
Mix yogurt with 1 tbsp mint and seasoning and set aside.
Fry in low-fat oil spray for 3 minutes on each side or until golden and crisp.
Toast and halve the pittas. Spoon some yogurt into each pitta, and tuck in 2 falafel, with some cucumber and tomato slices. Serve with a salad.
