Chicken in Foil
Chicken in Foil (Serves 4-6)
1 tbsp soy sauce
1 tbsp dry sherry
1 tbsp sesame seed oil
450g chicken breast cut into 16 equal pieces
4 spring onions, each cut into 4 pieces
1 small piece root ginger, shredded
1 shredded celery stalk
Mix together the soy sauce, sherry and sesame seed oil.
Add the chicken and toss well to coat, then marinate for 15 to 20 mins.
Cut out 16 pieces of foil large enough to enclose the pieces of chicken well.
Brush the foil lightly with oil, place a piece of chicken in the centre, top with a piece of spring onion, some
ginger and celery, and fold and seal the foil.
Place chicken parcels in a steamer and steam for 10 to 12 mins.
Serve hot in the foil.
