| CELERY AND LENTIL SOUP RECIPE
Celery and Lentil Soup
Celery & Lentil soup (Serves 4)
1 onion, chopped
3 celery stalks, chopped
1 clove garlic, chopped
175g. red lentils (Previously soaked)
1 litre water
2 tbsp. polyunsaturated vegetable oil
salt and freshly ground black pepper
In a large pan heat the oil and fry the onion until softened but not browned.
Add remaining ingredients and bring to the boil, cover and simmer for about half an hour, sirring occasionally.
Remove bouquet garni and check seasoning.
