Broccoli and Almond Salad
Broccoli and Almond Salad (Serves 4-6)
50g split almonds, roasted
1 small red pepper, deseeded and finely chopped
4 tbsp vinaigrette dressing
Break the broccoli into florets and blanch in boiling salted water to 4 mins.
Drain and cool.
Place in a salad bowl with the almonds and the chopped pepper.
Pour over the vinaigrette dressing and toss thoroughly.
