Beetroot and Orange Salad
Beetroot and Orange Salad (Serves 4-6)
450g raw beetroot, peeled
4 tbsp lemon vinaigrette dressing
1 tbsp chopped parsley
Grate the beetroot and place in a salad bowl.
Grate the orange rind and toss in the dressing.
Peel the pith from the oranges, break into segments, discard the membrane and chop roughly.
Mix the orange pieces with the grated beetroot.
Place salad in a serving bowl, pour over the dressing and toss thoroughly.
Sprinkle with the chopped parsley.
